Hello hello! Happy Wednesday!! Guys, I am so hype because we are SO CLOSE to spring break. So frickin’ close. I don’t have class on Fridays, thank goodness, so I just gotta do today and tomorrow, and then I’m home free for a week!
Hope you all are doing well, and the SAD’s aren’t coming in too bad. I have had a few days where I felt a bit meh, but I think more of that is just school stress rather than weather ’cause we’ve actually had a few pretty warm days!
Alright, I know it’s been a bit of a while since the last WIAW post, but before we dive in, I just wanted to mention something real quick.
I love doing WIAW posts because I’ve always loved reading them. What can I say, it’s the curious monster inside all of us. Somehow, getting a peek into someone’s plate sort of is like getting a glimpse into their life. But I never want these posts to serve as some sort of means of comparison for you all. So let it be known that I don’t always include every last bite in these posts, and the ones I do include I purposely don’t say whether I finished the whole thing or got more or whatever.
These are meant to simply be easy meal ideas that perhaps might inspire you to make some healthier choices or treat yourself to something sweet just because. Plus, we are all super different individuals who require different foods in different amounts to thrive; even I require different foods and different amounts to thrive from day to day! So please do take these with a grain of salt. Like Himalayan sea salt. 😉
This DELISH yogurt bowl was on the menu, and I’d been no joke planning on making this for a solid week. Mammoth Bar was kind enough to send me a few of their bars to try, and I actually really really liked them. I think bars are fantastic as an on-the-go snack, and I especially appreciate when they are made with whole foods and quality ingredients. These bars are not sketchy at all, and they taste delicious.
I always see these yogurt bowls floating around Insta with chopped up bars and nut butters, and I’m always like, hmm maybe I should branch out from the SAME YOGURT BOWL I ALWAYS HAVE, and try something new. And I am delighted to say I was not disappointed.
This bowl had my fave Fage greek yogurt, half of a Cashew Cinnamon Mammoth bar, a spoonful of Georgia Grinders Cinnamon Vanilla Pecan Peanut Butter (LOVE THIS), and half a chopped banana. Plus green tea, duh.
After a nice abs and cardio routine, I met Georgetown Bestie for our weekly Tuesday lunch. I was craving an acai bowl from South Block, and I had my eye on the one and only Nutella Bowl. Added some plant protein ’cause #gainz. LOL JK, I just noticed when I don’t add protein it doesn’t keep me full very long at all, and I had a long day of classes still ahead.
Next up was the other half of the Mammoth Bar from breakfast along with a small handful of dried edamame beans that I get from Whole Foods. Munched on this during Econ lecture, ignoring all the annoyed looks. Heh, sorrynotsorry. Followed up by an unpictured black coffee because the sleep deprivation is real.
After all my classes, I made myself a matcha tea with a scoop of collagen peptides and a splash of almond milk to fuel me through writing my Psych paper. Keeping those energy levels up any way I know how.
Also, do you like my mug? It was a birthday gift; my friends know I’ve got a raunchy sense of humor. 😉
I sometimes like to pregame dinner with carrots and hummus if I know I haven’t had enough veg because the dining hall is often quite lacking in micronutrients. Plus I was starving. Oh and pro tip: I always add a sprinkling of nutritional yeast to my hummus. Yum.
Dinner was gourmet from the dining hall (LOL). Brown rice, sautéed kale, and BBQ tofu. I added a shiz ton of Sriracha because that is my secret weapon against lackluster dining hall food. Did I tell you Roomie got me Sriracha2Go keychains for my birthday? The obsession is real.
After a whole bunch of studying I ended the night with a big ol’ Gala apple with a blob of almond butter. Plus a caramel that a friend sent me for my birthday from a local confectionary near his school. What a gem 🙂
Zat is all, friends. I think we all need a bit of sweetness, so would you mind leaving me a comment about a magical moment that happened to you recently? (Remember, it’s often the simplest things!)

I have not had a great Acai bowl since we were in Aruba over Christmas break. We have a South Block right near us too but I never think of going. Thanks for the reminder!

Dining hall or not, your dinner looks delicious to me. In fact now I have a crazy craving for BBQ. BBQ sauce over rice. BBQ anything…
You’re so close to being home!! I can smell it! So excited for you. I know you will do it up right.

Love the mug! we are halfway to this week being over! I can only imagine how good that will feel for you! I agree the simple things are the most magical! My sister made me a baggy of slime to take with me to work, now she loves her slime creations and NEVER gives them away so this was very small but very special.

THAT BBQ TOFU!!!!! I want some. A magical moment that happened to me recently was probably just realizing that God had helped me overcome some pretty major fear in my life. Also, I LOVE that flavor of the Mammoth Bar.

That tofu looks much better than it was hehe. And that is pretty magical; your faith really is so inspirational to me. And yes, Mammoth Bar rocks!

Magical is a day when I don’t need to come into work plus spending time eating with foodie friends. Then some shopping. Yes, today was needed! It’s back to overtime soon. And yes, I’ve sat on recipes for much longer before making them (if I ever got around to it). I need to start eating breakfast again…
