Why hello there! How the heck are you all? I’m currently watching the Crown with one eye and writing this with the other 😉 Good thing these posts are picture-heavy, eh?
I thought I’d show you guys some great eats from this past week, which was incidentally spent back in NYC for my spring break. If you missed it, I recapped some moments of magic from that week, as well as my workouts here. Now let’s dive into the food!
What an AWESOME pancake recipe! I’m quite picky with my pancakes, often sticking to just one or two old faithfuls, but sometimes I do branch out. This one has been linked all over the place lately, so I decided to go ahead and try them. Yum is all I can say. They’re really good even the next day after being in the fridge and that is no easy feat for a mortal pancake. 😉 I topped them with Trader Joe’s mixed nut butter and a drizzle of maple syrup (my go-to pancake toppings).
One of my favorite oatmeal recipes. I make it only when my mom isn’t home because she doesn’t like egg whites, but also likes eating the same thing as me, which poses an issue when she tries to convince me to leave out certain key ingredients.
In this case, the egg whites are tasteless in my opinion, but provide a great fluffiness and volume to the oats. I follow the recipe quite exactly, but leave out the sweetener, and I like to top it with a scoop of peanut butter and a spoonful of fruit-sweetened raspberry jelly.
Of course I had to stop by Two Hands in my short time back home. I feel like I always order the same thing- the acai bowl and the cold brew with almond milk. But seeing as how it was quite bone-chillingly cold that morning, I opted for something warmer and heartier. I went with the Winter Salad, which had roasted veggies and quinoa, as well as a big mug of black coffee. Perfect for warming up from the inside. 🙂
I mentioned this in last week’s post, but this was my delicious brunch from Sunday in Brooklyn that I enjoyed while getting to know the lovely Georgia Rounder. What a gem, and I’m so grateful to her for introducing me to this adorable spot. This was a cheddar scramble with some pan-roasted potatoes, chicken sausage, and whole wheat toast.
My stint with Aussie cafes did not end with just Two Hands, as I had to visit my other fave Bluestone Lane as well. I went with the Brekkie Board. My usual order is their to-die-for avocado toast, but I wanted to try something else. Perfect solution was the Brekkie Board, which is a half portion of their greek yogurt bowl that comes with berries, citrus curd, and homemade granola, and a half portion of their delicious avocado toast.
The Australians REALLY know their avocado toast.
This was one of the best packed lunches I’ve taken to work thus far. A roasted sweet potato from back home along with balsamic tofu and roasted veggies (both from Whole Foods hot bar).
My mom and I went for an impromptu dinner at a lovely small family-owned Greek restaurant in our neighborhood. We always share the Greek salad, the branzino fish fillet, and the steamed vegetables. So fresh, filling, and delicious.
My first time trying soup dumplings was a success! And I didn’t even break them!
I was super happy with this cauliflower rice stir fry. I got to use my Georgia Grinders cashew butter in it, which worked perfectly, and the whole meal was wonderfully light but still so warming and hearty. Perfect for the snow day. 🙂
This dessert was enjoyed on repeat throughout the break. This is a vegan brownie from Hummusapien with a scoop of Nadamoo vanilla ice cream (coconut milk ice cream is DA BOMB!)
Chips and dip! A few weeks ago, I tried a free sample at Trader Joe’s which enjoyed these corn chip dippers that I’d never paid attention to before. I am REALLY not a chip person, but these are amazing! The ingredients are basically just corn and sunflower seed oil, so that’s pretty great, and they’re just so addicting, but also filling enough that you don’t feel like you ate the whole bag and are still hungry.
I paired them with the kale and spinach dip also from TJ’s. Super match!
Sometimes I wake up totally fine to do a fasted workout, and sometimes I’m starving. On the latter days, my fave thing to eat first thing is half a banana with some peanut butter. Gives me just the right amount of energy and doesn’t leave me too full to work out right away.
Honeycrisp apple with a spoonful of almond butter. Best snack.
Annnnnd of course, there was coffee. This was a lovely hemp latte from Birch Coffee. My first time trying Birch, though it’s been on my list for months, and it did NOT disappoint. I shall be back for sure.
This was my first cup back in NYC in Black Fox Coffee. This place had also been on my list for a while because I have an inexplicable love for coffeeshops and restaurants that have animals in the name. Their almond milk latte was perfect to warm up after a long bus ride and a great accompaniment to my Macro homework hehe.
Unpictured but also enjoyed were copious amounts of carrots and hummus, my famous banana oats with almond butter, a bowl of delicious chili topped with cheddar, and some smoothie bowls.
