Hey guys! Welcome to another edition of WIAW as I enjoy full access to a kitchen and the abundance of time that comes with summer break.
I’ve been doing a lot of thinking and planning these past few days, just about what I want this summer to look like, what goals I have, what intentions…I’ve been craving quiet moments alone, and I’ve taken to starting my days with a short meditation to center me and help me focus on my goals for the day. It’s been pretty great, and I’ve definitely been feeling clearer on certain things. I do intend to blog about my whole process of getting back in touch with my intuition, once I’ve had a bit more time to process everything and actually feel like I’m back in the groove. For now, let’s check out the eats!
After a morning sweat sesh, I was craving an egg sandwich like nothing else. I basically never crave sandwiches, but when I do, it’s always an egg one. I had half an avocado and some spinach on their last legs in the fridge, so I mashed up the avocado with some Everything But The Bagel Seasoning, then cracked an egg on the skillet and added the spinach and two slices of Ezekiel bread to heat everything up. Then I put some avocado on both slices of bread, and in between, the sautéed spinach, the egg, and some Sriracha (duh). It was one of the most satisfying breakfasts I’ve had in a WHILE. The pic does not show the top bread because I had to show you that #yolkporn. I mean COME AWN!
I had to go to the city to run a bunch of errands, so I was basically running around until around 3pm, which is when I paused at Bryant Park to eat my chia pudding that I packed with me for a quick lunch.
This guy had 2 tbsp chia seeds, 1 tbsp cacao powder, 1/2 cup almond milk, 1/2 sliced banana, and the remnants of this jar’s cinnamon pecan peanut butter. This was SO GOOD and the perfect consistency. I should really eat chia pudding more often.
About 1.5 hours later, while shopping at Trader Joe’s, I was starving again, so I pulled out a bar I packed with me. Pro tip: never go out into the city without a good amount of snacks. Also, this bar is great.
I dragged all my groceries home, enjoying half a kombucha on the way.
A little while after I got home, I had this delicious spinach kale greek yogurt dip I got at TJ’s with some snow peas to dip. Def had more dip than pictured bc I went back for seconds. One of my favorite snacks!
Finally, I made salmon with this recipe and paired it with this recipe for mushroom kale cauliflower rice that I cooked with some coconut aminos. I drizzled some sriracha all over post-pic of course. Turned out DELISH! Had it with some carrots and hummus, duh.

Ok, so before I read what that dip with the snow peas was I totally thought it was some kind of oreo frosting and was totally grossed out that you would eat it with veggies. But then I saw its kale dip and Im ok now. LOL Everything looks amazing

Stopping in a park for a snack and/or packed lunch is my jam. Love it and do it probably 4 times a week. That dinner is also looking soooooooooo good to me!
