Hey hey hello! It’s been a hot second since I’ve done a WIAW, huh? Well we’re back with a vengeance today because I’m sure you all have been simply dying of curiosity about what Nicole has been eating. Heh. Well, since it’s been a bit of a while, and I seem to be having trouble remembering to photograph one entire day of food, I decided to just make it an eats lately post. Kinda goes along with the theme of yesterdays’ life lately post, yeah?
Food lately has been pretty delicious! I’ve been cooking quite a bit, though more often that not it’s super simple quick meals because I can’t be bothered. I’ve been especially digging smoothie bowls loaded with veggies and snack plates with different dips, cheeses, and raw veggies for dipping. But I’ll let the pictures do the talking, shall I?
A stack of the best pancakes topped with a simple blueberry sauce I made by heating up some frozen blueberries with a bit of maple syrup. Topped with mixed nut butter duh.
Tons of these smoothie bowls were enjoyed. I love having it either for breakfast or as a quick lunch, and I usually pack it with veggies. I like to add, in addition to the spinach, some frozen riced cauliflower and frozen zucchini if I have it. It’s like a salad that tastes like ice cream heh 😉
Occasionally I have yogurt bowls. Though definitely not as often as I do in college because come on, access to a full kitchen means yogurt bowls are SO last season. Sometimes I do get a hankering however. It’s always the same recipe. Greek yogurt, a couple spoonfuls of granola, cacao powder, chia, hemp, and cacao nibs. Plus half a chopped banana.
The BEST chocolate chip oatmeal pancakes enjoyed with Roomie as a lazy Sunday morning breakfast. She was in charge of the bruleed banana, which she just sautéed in coconut oil with a splash of maple syrup, almond milk, and vanilla. Plus lots of cinnamon. It made for the best pairing with these pancakes! We obviously had mixed nut butter on the side, and I made some dang good french press coffee. I think my coffee making skills are improving quite a bit 😉
Last week I got brunch with the lovely Katherine at Banter. The greens salad topped with a poached egg was everything. And their coffee is not to be missed.
I know this looks so weird, but this was one of the best meals I made in a while. It’s one of Talia’s recipes I was testing for her cookbook, so I can’t give y’all the full lowdown, but lets just say theres some sweet potato fries, beans, and lots of veggies in derr plus the most divine secret sauce (featuring my favorite sriracha). We were all mmming through the whole meal.
This was so satisfying. Just look at those creamy eggs! No rubbery scrambled eggs EVER in this household; the trick is turning off the heat when they are barely cooked through and letting them sit in the pan to finish cooking completely. And to never stop stirring! I served this with a piece of goat gouda and some sautéed spiralized zucchini, all topped with Everything But The Bagel seasoning and goat cheese.
As ridiculous as this is, this was my first time trying Westville despite it being on my to-try list since sophomore year of high school. I literally recommended it to a friend AND got him hooked on it before I tried it. Like that takes some talent. But anyway, it did not disappoint at all. I love how many plant options they have and how delicious and creative all their veggies are. I got the sweet potato fries, roasted cauliflower with tahini, and dijon brussels sprouts.
My mom and I stumbled upon the tiny artisanal chocolate shop Stick With Me while exploring Soho one weekend. They make these gorgeous truffles right in-house that honestly look like works of art. I expected them to taste fine but look better than they taste, but I was blown away. I got the dark chocolate peanut butter pretzel one, and it was an explosion of flavor. Love unexpected awesome finds like this!
Unpictured are a giant Levain Bakery cookie, tons of coffee, a banana cream pie I baked that was entirely refined sugar free and just about the best thing ever, and my bodyweight in fruit.

After reading this post, I’ve realized I seriously need to up my homemade pancake game. I’ve been slacking!
Also those eggs are super fluffy and light. I’m going to try your tip on turning off the stove when they are barely cooked through.

Scrambled eggs. Slow and steady. I learned that from Gordon Ramsay and have never gone back. The last little piece of advice is, at the very end, stir in a dallop of yogurt or sour cream. Creamy to perfection!!
