I’ve got another recipe appreciation post for ya! I’m super curious if you guys are enjoying these, and bookmarking some of the recipes I share in these posts (or *gasp* maybe even MAKING them). 😉

Here’s what I made and loved in the past week.
Blueberry Cheesecake Muffins
See these beauties right here? BEST. MUFFINS. EVER. Literally these are 100% the best muffins I’ve ever made AND quite possibly the best I’ve ever eaten. Trust me, that is not a statement I use lightly.
Now technically these are Triple Berry Cheesecake Muffins, which sounds even more divine, but I only had blueberries, and this isn’t exactly the time to be excessively picky. 😉
Now this isn’t one of those “healthified” kale-infused sprouted grain muffins I normally like to make (though there’s certainly a time and place for those). These are your traditional buttery sugary bakery-style muffins, but that’s what makes them so good. Run don’t walk. :p
Cream Cheese Frosting
Just continuing that cream cheese trend. It’s funny because I don’t even LIKE cream cheese on its own, but I do like the sweet cream cheese that goes into baked goods or becomes frosting haha. I’ve shared this bread recipe before, but I actually decided to make just the frosting to put on top of the banana cake that my mom made me for my graduation day. The cake recipe is an old one from my grandma, and I felt like the frosting would go perfectly with it.
This is literally the easiest thing ever to whip up (all you need is a mixer), and it honestly elevates everything you put it on, from baked goods to strawberries. Highly recommend just storing a little batch in the fridge for dipping purposes (fruit, crackers, fingers, whatever floats your cream cheese boat).
No-Yeast Bread
I LOVE this recipe. It’s honestly the biggest fooled ya ever because it looks like an artisanal loaf you would buy from a local bakery, but it’s one of the easiest things to throw together, and most importantly, does not require working with yeast! It’s also super delicious, crusty, and goes equally well with a bowl of soup as with mashed avocado and egg.
We actually loved it spread with some butter and with smoked salmon on top. I also made incredible cauliflower pizza poppers (it’s cauliflower…that tastes like pizza…I mean come on) from this wonderful cookbook to go with the open-faced sandwiches. Hit the spot.
And that’s actually it for me this week! My mom did a bit more cooking this time, so I wasn’t in the kitchen as much as usual. I also made some repeat recipes (banana cacao acai bowl and pancakes) that I’ve shared in prior recipe posts, so feel free to look back on those. Plus a couple recipes from Talia’s cookbook (like her black bean brownies yum!).
