Hello lovelies! It’s Wednesday, and you know what that means!
I’m excited to bring you this day of eats because it was a GOOD one. Not only did it involve a lot of awesome food, but it was also my first day as a free woman.
By that I mean that I finished my summer internship yesterday, and today was my first day as a non-intern.
Which meant that I slept until 11am. #noshame
I wasn’t completely blobby today, though, as girl gotta make money, but why don’t we jump into the food and I’ll tell you what else I was up to.
Lez go!
Okay. I’m really having trouble right now becaue I want you to understand the extent of the deliciousness of this breakfast, but I don’t know how to put it into words.
Monique is one of my favorite recipe developers EVER, and these whole wheat zucchini pancakes from her blog rocked my pants.
Like, I wasn’t even wearing pants, and they still rocked them.
I’ll put them in this week’s recipe roundup, but I should note that the recipe makes four servings, and I ate mine with Trader Joe’s mixed nut butter (also known as the best thing ever) and my fave Trader Joe’s dark roast black coffee.
Also I make small pancakes, silver dollar style, but that’s just me.
This breakfast definitely made it feel like a weekend. It was honestly a party in my mouth.
BEST PANCAKES I EVER MADE. I know it’s a bold statement, but I stand by it.
Please if you make these, dip them in a hefty dose of nut butter and just watch as life turns into a rainbow unicorn fiesta.
A little later, I had an unpictured matcha tea with a small splash of half and half (I ran out of almond milk, the horror) and one of the remaining little pancakes with a bit of mixed nut butter on it.
That was perfect fuel for this workout, which I supplemented with a short ab sequence I cooked up myself using some paper towels + this workout to end.
And then the next twenty minutes were a blur because I had that amount of time to shower, eat lunch, and get ready to run to the house of the kid I tutor (there’s the job I mentioned earlier). Thankfully, he lives only a 10 minute walk away.
I ended up throwing carrots and hummus into my mouth at breakneck speed, while my wonderful mother made me a slice of Ezekiel toast with some butter and smoked salmon.
I had to take it with me and scarf it down as I walked.
After tutoring, my mom and I had agreed to meet for dinner at one of our favorite Greek joints.
We got the Greek salad (always leaving the olives), one branzino filet to split, and a side of steamed veggies.
So filling and satisfying.
Worthy of mentioning, a bird pooped on my phone at the end of the meal. No, I’m not joking. We were sitting underneath a canopy thing, and the bird was on top of that, and I guess my phone was on the table directly underneath the bird’s butt.
Anyway, that kind of took away my appetite but I was done with most of my fish by then anyway.
My mom and I walked around for a bit by the canal near my house, and then we stopped by the grocery store to get a pint of ice cream. I was going to make Ambitious Kitchen’s peach pie today, but because the walking took a little longer than I’d expected, I decided to leave that for tomorrow.
I still wanted to try the ice cream though, so when I got home I had a few spoonfuls of it. And then a few more…
HOLY CHEESEBALLS. This ice cream is magical. It is now my favorite store-bought ice cream, and that is not a statement to be taken lightly, since the title was held by Rocky Road for about 8 years.
It tastes like apple pie or some kind of pie, and it has actual cookie pieces in it, and it’s DAIRY FREE?! I mean give me an ostrich and call me Barbara (what?), ‘cause I am MINDBLOWN.

Ended the night with some blueberries, grapes, and cherries. I def. had more than what’s pictured.
Does anyone else find that when you eat grapes and cherries together, it’s sometimes hard to tell them apart? No? Just me then…
