Hey hey hey! Whaddup guys? I’m currently sipping an herbal tea and listening to some old school Taylor Swift while writing up this post, and I just finished catching up with Syracuse Bestie so I’m feeling pretty damn good right now. 🙂
Actually, could you take a second right now, pause, and just think about one thing that’s really awesome in your life right now? It could be the perfect coffee you had this morning, the hot guy or gal who smiled at you on the train, or your dog licking your face to wake you up in the morning. Just take a second to be grateful for whatever it is; the simplest mindset shift can turn your whole day around.
I’ve been doing SO MUCH brainstorming lately, about blog content, about certain summer goals I have, and just everything, and it kind of feels like my brain is always about to explode. But like in a good way?
Anyway, all that to say I’m hoping to get some awesome content for ya guys and just some exciting stuff coming up in the next few months 🙂
I thought today I could just share some yummy foods I enjoyed in the past few weeks, in lieu of a more traditional day of eats. Hope you don’t mind 😉 Let’s goooooo!
I’m not sure what took me so long to try Kodiak cakes honestly. I’m sure most of you guys have heard of these; they’ve been all over the Instagram #wellness community for quite a while. I finally decided to go for it, and I of course went for the Chocolate flavor. I topped them with peanut butter and caramelized bananas that I sautéed in coconut oil and cinnamon. Much recommended!

If you guys have been reading this blog for any length of time, you probably know that brunch with friends is one of my favorite things ever and is such a simple way to inject some joy into even the most blah day. This week was a particularly good ‘un for friend brunches because I got to see some college friends who came down to NYC, as well as a great brunch with Gtown Bestie at Sunday in Brooklyn!

Yet another brunch with college buds at new to me Baker & Co. I got the kale squash frittata, to which Roomie said, “That is SO Nicole.” LOL, she ain’t wrong :p
This was from a brunch at Milk & Honey in Brooklyn, which has the sweetest vibe and the most delicious egg dishes! I got the corn fritters with poached eggs topped with arugula and a yogurt sauce. I mmm’ed my way through the whole thing.
Not the prettiest picture, but I HAD to share this with you guys! This is my newest favorite creation, and it’s so simple! I just sauté some white mushrooms, then scramble in 2 eggs (DON’T over scramble, and never stop moving the eggs around the skillet with your spatula. Turn off the heat when they JUST stop being wet. That’s the ticket to perfect soft scrambled eggs.) I season with Everything But the Bagel Seasoning. And then…the most important step…I slice up some goat cheese and put it on the plate, and then I plop the eggs right on top. The goat cheese instantly melts, and you get delicious creamy goodness in every forkful.

After a fun Soho outing with my mom, we were pretty hangry (shopping will do that to you, heh), and we both had one thing on our mind- Chobani Soho. I always get the PB & J yogurt bowl with tons of peanut butter, grape jelly, grapes, and peanuts. Pure perfection. Yes, I can make it at home. Yes it tastes better here.
I made these muffins yesterday because I had tons of blueberries on their last leg. And also because this is one of my TOP muffin recipes. They are so so good and don’t taste “healthy” at all! For all of you gluten free/refined sugar-free peeps, these hit both parameters, and nobody can tell! A summer must!

Its kind of funny to hear you refer to Taylor Swift music as old school, considering she hasn’t even been around or alive for that long. LOL I have not tried kodiak cakes yet but they look delicious and I see them everywhere. Your muffins look amazing! My all time favorite are my vegan peanut butter banana muffins. When I owned my coffee shop they were the top seller! Even over regular non vegan ones.

It never would have occurred to me to put the eggs on top of the goat cheese, instead of the other way around. And mushrooms…mushrooms make everything better.
I had this strawberry ice cream soda float when I was in Steamboat Springs a couple weeks ago and it’s all I can think about since.

Eating lunch at work and reading your post and thinking of those scramble mushroom on the top of goat cheese, I am sure it would be better that what I had for lunch. Gona try it.

Your egg game is strong!!! I kind of want to go make an egg after reading this. I agree on the preparation of scrambles – don’t beat it up! Soft scrambles are it BEST. Plus goat cheese, obvi.
