Hello, my lovelies! I admit, I felt like this What I Ate Wednesday would never come. In the throes of finals, and the never-ending-ness of this semester, it honestly felt like I was going to become one with my dorm. But I am finally back home and eating meals that I can actually cook myself and eating enough vegetables and it’s everything. Can you tell I am VERY excited about having a fully stocked kitchen again, and did I mention all the VEGGIES?
Let me take you along through my day of running a couple errands at home.
I woke up at 9am, and as soon as I felt hungry, I started prepping one of my favorite oatmeals ever. I’ve talked about it lots, but here’s the recipe. It’s a good ‘un. Topped with a dollop of sunflower seed butter and Trader Joe’s raspberry fruit spread (sweetened with just fruit juice!).
After this delicious meal (god I missed stovetop oats), I got ready, packed my bag, and headed off on an adventure. To the DMV to renew my ID. Not that exciting, is it?
LOL.
It ended up being a very quick trip actually, so I was in and out in under 15 minutes (UNHEARD OF). Since I was already out and about, I decided to walk to a cute coffee-shop I found online that was about a 30 minute walk away.
On the way, I bopped into random shops that looked interesting. I went into an ayurvedic herb shop (so cool!), a pet shop, and an Urban Outfitters hehe. By the way, this is one of my favorite things to do and something I do so rarely because it seems I never have just free days like this where I can afford to walk around without much of an agenda. Feels pretty luxurious.
Finally I arrived at Swallow Cafe and set up camp there. I did some job apps, some blog work, and some Harry Potter reading (did I mention I am rereading it??). Pure bliss.
Then the tummy started grumbling, and silly me forgot to pack a snack, so I decided to head back home for lunch in the interest of saving money and also because I kind of wanted to obnoxiously lie on my couch reading instead of sitting on a chair. #firstworldproblems
Lunch was a quickly cooked omelet made with dos eggs, stuffed with mushrooms and baby zucchini, all cooked in avocado oil. I sprinkled some nutritional yeast on there and drizzled sriracha all over because it looks like my obsession has carried over from college. I paired this with a kombucha and carrots with hummus. Plus this delish eggplant dip my grandma made.
After lunch, I did some unpacking. Such an adventure LOL. There are so many boxes and bags currently strewn around my apartment, but I did a hefty portion of the job. Podcasts definitely help!
Then Iย thought about working out and basically did that thing where you procrastinate until it’s too late to work out, and then you’re like “heh, oops how’d that happen?” and then it was time for dinner. I did watch some SNL though so…winning?
Honestly, I felt so lazy all day (I blame the weather), so working out just didn’t feel appealing at all.
I quickly baked these protein brownies for the week and then started cooking dinner while munching on some grapes. Because if you don’t snack while cooking a meal, then who even are you?
Dinner was zoodles cooked on the stovetop with lots of Trader Joe’s marinara and these really good frozen turkey meatballs also from TJ’s. The man can do no wrong. I chopped up some mushrooms and onions into the sauce, and cooked it all low and slow for around 20 minutes. Enjoyed with some TJ’s greek yogurt guac and snap peas.
And then I satisfied my desire of lying on the couch reading Harry Potter. Gotta love summer vacation.

Best thing I ate: homemade granola.
But I also love oatmeal. I need to try that fruit spread from TJ’s. I usually use fresh raspberries or blueberries.

Yummmm, granola is one area I have not yet ventured into, but I have plans for it this summer. And yes, the fruit spread is a GAME CHANGER in oatmeal. Esp with some nut butter. :p

Sounds like you’ve found your way around a home kitchen again JUST fine. I’m happy for you and your hot oats to have reunited again. True love right there.
A day to walk around outside without an agenda? That’s absolutely bliss.

Yessss, and omg I have tons of favorites! Must I choose one? I love basically anything from Ambitious Kitchen (currently wanna try her tahini brownies) and I love Hummusapien pumpkin bars and any of the cookies. The Big Man’s World has a great protein brownie recipe with just four ingredients that is BOMB. And there’s a recipe on Hummusapien written by Robyn from the Real Life Rd which is flourless pb cookies and is literally one of my favorite recipes ever…..haven’t baked muffins in a while though…must get on that. ๐
