Howdy! (I always wondered, do people really say that in all seriousness in some places?)
How are y’all? My week thus far has been a conglomeration of coffee, lots of writing (had quite a few papers and assignments due), and some much-needed social time with friends.
I often marvel at how different sophomore year is from freshman, in what I’m spending time on. This year, I’m so much more likely to err to the side of spending too much time with friends than spending too much time on schoolwork.
Don’t get me wrong, I work hard, and I think grades really are important. I didn’t choose a university like mine to blow it all on being social and neglecting my schoolwork.
But at the same time, much of freshman year for me was devoid of real human connection. I was surrounded by people, but often felt like I was completely alone. I always felt like I wanted to hang out, but I had no one to do it with, so I would just burrow into my work.
So yes, maybe I’m getting less sleep and maybe my GPA is a tiny bit lower, but I’ll take that over being unhappy and unfulfilled any day.
Woo, totally didn’t expect to start this post like this, but sometimes you just gotta go with your thought stream, eh?
Let’s see what I ate last Sunday! As usual, Nicole forgets about the concept of three main meals and instead uses snacks as a bridge between breakfast and dinner. #weekendvibes
Breakfast was this deliciousness from South Block Co. My mom and I headed over for a very late breakfast (read: it was 12:30pm), and I knew I wanted to try the new Nutella bowl. An acai bowl topped with bananas, coconut flakes, and a luscious drizzle of Nutella? Sign me up!
I’m honestly not even that big on Nutella, and never would even think to put it on an acai bowl, but just trust me when I say that this was next level.
I couldn’t quite finish the whole thing, but I gave it an honest effort. :p
Had this along with an absolutely incredible iced almond milk latte from Grace Street Coffee <3
This kept me full until about 3:30. I was in my room at that point, and my mom had left, and I knew I had dinner plans at 6:30, so I didn’t really want to go out and get lunch.
Soooo, I had an apple with almond butter.
And then I had my new favorite granola (seriously this is the BOMB) and some (unpictured) pineapple.
And then our dinner plans got postponed, and I was getting seriously hangry, so I had another serving of granola. Heh. Seriously, I couldn’t stop with this granola. I think granola is the only thing I have to measure out actual servings of because otherwise, I think I will literally demolish the entire bag in one sitting. Which…you know, maybe wouldn’t be the worst idea 😉
FINALLY, my friends were ready to get together for dinner, so I took my Sweetgreen salad (I got it with my mom in the morning to eat later) over to Georgetown Bestie’s room. The rest of them ordered from Curry and Pie, but I was very happy with my salad after a pretty indulgent and veggie-less weekend hehe. This pic is actually from last Friday, but ya know, same old Sweetgreen.
The salad was kale, sweet potatoes, roasted broccoli, chickpeas, tofu, tomatoes, and carrots. Dressed light with a balsamic vinaigrette. Perfection 🙂
Around 9pm, I had some Trader Joe’s plantain chips with hummus and then finished all my work and was in bed by 12. Quite the feat for a Sunday night! (Anyone else leave literally all your responsibilities for Sunday night and then basically regret it all of Monday only to do it all over again the following week? Yeaaaah, really trying to break that habit.)
And that was my Sunday! Hope you guys are having a wonderful week, and if not, you’ve still got half the week to turn things around. I challenge you to treat yourself this week, whether it be a morning coffee date or a couple Netflix episodes or just a few extra hours of sleep. The world will keep turning if you neglect a couple responsibilities, and you always come first.

Southblock smoothie bowls and Sweetgreen two of my favs! I NEED that granola, sounds delicious. I always measure mine too or I would eat wayyyy to much!

That nutella concoction looks insane and I don’t even like Nutella! My great grandma is from west virgina and they say Howdy for serious and its very odd (read: annoying) Looks like you had a great Sunday!
