Hey hey! Happy Monday! I’m feeling pretty pumped this week after a weekend that was the perfect mix of social time and rest. Saturday I had long brunch/therapy sesh with Georgetown Bestie, and then we met up with another friend to see the new Lion King movie (enjoyable but doesn’t hold a torch to the original, in my opinion), followed by steamy creamy slices of Artichoke pizza that we stuffed in our faces on a Union Square Park bench at 9pm. Happy days. 🙂
Sunday I got 10 much-needed hours of sleep and then did a bunch of random errands and baked up a storm! Nothing like Sunday baking, eh? Especially with some cozy tunes playing. 🙂
So today I’ve got another Currently Loving post for you because I actually have quite a few new discoveries I really want to share with you! As well as some rediscoveries, which can be just as delightful! Let’s jump in!
Pancakes <3
You guys, I’m currently having a moment with pancakes. All kinds, too! Zucchini, blueberry, Kodiak…I don’t discriminate! It’s just the absolute best weekend breakfast, and paired with a cup of coffee and some great conversation, it’s pure morning magic. 😀
My absolute favorite recipe that I’ve definitely shared on here before are these zucchini bread pancakes (I always do half oat flour and half whole wheat pastry for the BEST texture). Sometimes I add in chocolate chips because…chocolate for breakfast. Duh. Always served with almond butter and maple syrup, yum.
Also love the Dark Chocolate Kodiak cakes that I always slice a banana into before cooking. These have such a great texture and pair perfectly with peanut butter and, yes, maple syrup.
I’m planning on making these sometime soon because they look totally up my alley, but if you have a pancake recipe you’d like to recommend, I am all ears!
Pretty Woman
I recently saw this show on Broadway and absolutely LOVED IT! I definitely mentioned before that I’m a huge Broadway fan, and this show is actually my 23rd! Of course, of those 23 not every one has been a hit, but this one so was.
Oh and for an added surprise, I realized midway through the show that the main character’s role was played by Samantha Barks! As in, Eponine from the Les Mis movie. I don’t know about you guys, but Eponine was always my favorite character, and I’d be lying if I said I didn’t ballad my way through On My Own during more than one shower…
That’s So Maven Episode 105 with Dr. Christiane Northrup
To be honest, it took me months to actually turn this episode on. The title said it was about menopause and aging, and that felt slightly less relevant for me than some other episodes in my feed, so I just kept pushing it back. I finally got kinda curious, though, because I’ve been thinking a lot lately about aging in this country vs. in Europe and just asking a lot of questions about why our culture is so focused on eternal youth blah blah. Just some everyday musings, ya know? 😉
Anyway, this episode BLEW MY MIND. It was one of the best episodes I’ve listened to in recent months, and the guest is a wealth of knowledge and pure positive energy. Please listen if you want to totally change your perspective on getting older, as well as learn about how you can support your body while it’s young to keep feeling amazing for years and years to come.
Armchair Expert Podcast
Okay, I get the hype. I first found out about Dax Shepard’s podcast from the Life is Short podcast, which I mentioned here. I listened to an episode a few weeks back, and it didn’t really connect, so I kinda set it aside.
But I’ve recently discovered the wonder that is Esther Perel, and I’m sure she will appear in another Currently Loving post, but I need to do more digging and learning about her before I share all my findings.
Anyway, Dax has a fantastic episode with her, as well as with Elizabeth Gilbert (who is 1000% a person I would want to have dinner with). He definitely has a knack for interviewing, and the sheer variety of guests he has on his show is incredible. Honestly almost any celebrity you can think of and tons of fascinating experts on topics of all kinds. You have a convert, Dax.
Breakfast Cookies
I talked here about how I’ve been loving packing a baked good and some fruit with me to work for an easy portable breakfast that feels more exciting than, say, a bar. (Although I’m still hard-core loving on Perfect bars). So in the past couple weeks I’ve made two kinds of breakfast cookies that totally elevated my weekday mornings. I was honestly skeptical about the sound of both because they don’t sound traditionally cookie-ish. And while they aren’t your grandma’s chocolate chip cookies, they are both so so good and make an awesome breakfast that’s good for you but also tastes bomb.
Kay, that’s a wrap for me! Stay cool, gang! xx
Any pancake recipe recommendations?
